Overnight Yeasted Waffles
Many of us just order waffles for breakfast or brunch or make a quicker version that is mixed the morning of making (like this recipe).
Belgian waffles are supposed to be the OG waffle: they are usually made with yeast, whipped egg whites are folded in and they use something called pearl sugar which adds a deeper colour and slight caramel flavour.
I am offering an easy overnight recipe for waffles that anyone can whip up. It has a yeasty taste, light texture and golden colour. Try this recipe out this weekend for breakfast.

3 cups all-purpose flour

2 tsp. active dry yeast

1/4 cup sugar

3/4 tsp sea salt

1/2 cup melted butter or vegetable oil

1/2 cup warm water

2 cups warm whole milk

2 large eggs, beaten

1/2 baking soda
-
cooking spray for waffle maker
- Into a large bowl, add your flour, yeast, sugar and salt and mix with a fork to combine.
- Add your oil, water and milk and stir with a wooden spoon until combined and there are no more dry floiur. Cover with plastic wrap and allow to rise 12 hours/overnight.
- Into a small bowl, crack your eggs and add the baking soda and stir to combine. Add egg mix to your waffle batter and stir in.
- Spray your waffle griddle with cooking spray and make waffles according to your mfgr’ instructions.
- Once cooled, you can store any leftover waffles in a zip-lock bag and place in the freezer.
